Les pratiques agricoles ont un impact sur la qualit\u00e9 de notre alimentation, sur la sant\u00e9 des animaux et sur l\u2019\u00e9quilibre des \u00e9cosyst\u00e8mes. Faire \u00e9voluer la protection des cultures n\u00e9cessite de partager les risques, les connaissances et les outils pour transformer des int\u00e9r\u00eats divergents en objectif commun. Les essais men\u00e9s au Costa Rica et au Br\u00e9sil sur le caf\u00e9 prouvent qu\u2019il est possible de maintenir les rendements tout en diminuant significativement le recours aux produits phytosanitaires. Elle a montr\u00e9 comment des vari\u00e9t\u00e9s locales de l\u00e9gumineuses, s\u00e9lectionn\u00e9es avec les agriculteurs, permettent d\u2019obtenir des cultures plus adapt\u00e9es aux territoires, plus nutritives et plus r\u00e9sistantes aux al\u00e9as climatiques.<\/p>\n\n\n\n<p><strong>La restauration collective peut devenir un moteur puissant de la transition alimentaire<\/strong>, comme l\u2019a illustr\u00e9 <strong>Emmanuel Brehier<\/strong>, cofondateur de <strong>HARi&amp;CO<\/strong>, une entreprise qui valorise les l\u00e9gumineuses fran\u00e7aises pour proposer des alternatives v\u00e9g\u00e9tales accessibles et savoureuses.
